Turkey Bacon Egg Cups

Ingredients
  • Cooking spray
  • 6 slices uncured turkey bacon
  • 3 slices sprouted multigrain (or 7-grain) bread
  • 6 large eggs
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon pepper
  • 6 tablespoons shredded cheddar cheese
  • 4 tablespoons sliced fresh green onions, divided
Steps
  1. Preheat oven to 375°F. Coat 6-cup muffin pan with spray. Arrange 1 piece bacon in each muffin cup, curving around sides (wash hands).
  2. Cut 6 (2-inch) circles from bread with cookie or biscuit cutter; arrange in bottoms of bacon-lined muffin cups.
  3. Crack 1 egg into each muffin cup on top of bread and inside bacon. Sprinkle eggs evenly with salt, pepper, cheese, and 2 tablespoons green onions.
  4. Bake 20–25 minutes until eggs are 160°F and bacon is cooked. Let stand 5 minutes to cool. Sprinkle with remaining 2 tablespoons green onions. Serve.
