Ingredients
- 1 ¼ lb flat iron steak
- 1 teaspoon sea salt
- ½ teaspoon cracked black pepper
- 2 tablespoons olive oil
- 1 (12-oz) jar brown gravy
- 2 teaspoons Dijon mustard
- 1 tablespoon herb garlic butter
Steps
- Preheat large sauté pan on medium-high 2–3 minutes. Coat steak with salt and pepper. Place oil in pan, then add steak; cook 2 minutes on each side.
- Reduce heat to medium-low; cook 4–5 more minutes on each side or until steak is 145°F (for medium rare). Remove steak from pan; let stand 5 minutes.
- Reduce heat on pan to low; stir in gravy and mustard and simmer 2 minutes. Remove pan from heat; whisk in butter. Slice steak and serve with gravy.
Other Preparation Methods
Grill: Preheat grill. Combine ½ teaspoon each: paprika, kosher salt, ground cumin, and garlic powder. Rub over 1 ¼ lb flat iron steak; then drizzle with 1 tablespoon oil. Grill 6–7 minutes on each side or until steak is 145°F (for medium rare).
Broil: Preheat broiler. Coat 1 ¼ lb flat iron steak with 2 teaspoons fajita seasoning and 1 tablespoon oil. Place on foil-lined baking sheet; broil 10–12 minutes on middle rack or until steak is 145°F (for medium rare). Let stand 5 minutes, then slice.
