Chocolate Mascarpone Pudding

Ingredients

  • 4 cups water
  • 1 cup mascarpone cheese
  • 4 large eggs
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsweetened cocoa powder
  • Pinch of kosher salt
  • Plastic wrap
  • ½ cup heavy whipping cream

Steps

    1. Bring water to a simmer in medium saucepan; set mascarpone out to soften. Separate eggs for yolks; reserve whites for another use or discard.
    2. Place yolks and sugar in bowl that just fits in top of saucepan; place over simmering water. Whisk constantly 5–7 minutes until pale yellow and mixture falls in ribbons when whisk is lifted above bowl.
    3. Combine mascarpone, vanilla, cocoa, and salt until smooth. Whisk into egg mixture until combined. Remove bowl from hot water. Press plastic wrap against surface of pudding and chill 1 hour or until firm.
    4. Beat cream with electric mixer until stiff peaks form; fold whipped cream into pudding. Serve.
