Ingredients
- 4 cups water
- 1 cup mascarpone cheese
- 4 large eggs
- ¼ cup sugar
- 1 teaspoon vanilla extract
- 6 tablespoons unsweetened cocoa powder
- Pinch of kosher salt
- Plastic wrap
- ½ cup heavy whipping cream
Steps
- Bring water to a simmer in medium saucepan; set mascarpone out to soften. Separate eggs for yolks; reserve whites for another use or discard.
- Place yolks and sugar in bowl that just fits in top of saucepan; place over simmering water. Whisk constantly 5–7 minutes until pale yellow and mixture falls in ribbons when whisk is lifted above bowl.
- Combine mascarpone, vanilla, cocoa, and salt until smooth. Whisk into egg mixture until combined. Remove bowl from hot water. Press plastic wrap against surface of pudding and chill 1 hour or until firm.
- Beat cream with electric mixer until stiff peaks form; fold whipped cream into pudding. Serve.
