Ingredients
- 3 cups frozen (or fresh) fruit
- Cooking spray
- ½ cup unsalted butter
- 1 lemon, for zest/juice
- 1 cup + 2 tablespoons sugar, divided
- 1 tablespoon + 1 ½ cups self-rising flour, divided
- 1 teaspoon apple pie spice, divided
- ¾ cup milk (or apple juice)
Steps
- Thaw frozen fruit, if necessary. Preheat oven to 425°F. Coat 9-inch square baking dish with spray. Cut butter into small pieces to soften. Zest lemon (1 teaspoon), then juice (2 tablespoons). Cut fruit into bite-size pieces.
- Combine in large bowl: ½ cup sugar, 1 tablespoon flour, lemon zest, and ½ teaspoon pie spice until well blended. Stir in fruit and lemon juice; transfer to baking dish.
- Combine ½ cup sugar with remaining 1 ½ cups flour and ½ teaspoon pie spice in second large bowl. Add butter; use 2 forks to cut butter into flour mixture until crumbs form. Stir in milk until well blended.
- Spoon dough over fruit. Sprinkle remaining 2 tablespoons sugar over dough. Bake 30–35 minutes until top is golden and edges are bubbly. Serve.
