Multicooker Texas-Style Ground Beef Chili

Ingredients

  • 2 medium sweet onions
  • 2 small, fresh jalapeño peppers
  • 4 cloves garlic
  • 2 tablespoons grapeseed oil
  • 2 lb ground beef
  • ¼ cup tomato paste
  • 1 ½ teaspoons kosher salt
  • 2 tablespoons ancho (or chili) powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 ½ cups red enchilada sauce
  • 2 cups water
  • 1 tablespoon chipotle hot sauce
  • 2 tablespoons instant masa harina
  • 8 oz shredded cheddar cheese
  • ½ cup sour cream (or crema)

Steps

    1. Chop onions (2 cups), jalapeños, removing seeds and membranes if desired, and garlic coarsely.
    2. Preheat large sauté pan on medium-high 2–3 minutes. Place oil and beef in pan; brown 3–4 minutes, stirring occasionally, until no pink remains and beef is 160°F.
    3. Stir in jalapeños, tomato paste, salt, garlic, and 1 cup onions. Cook 3–4 minutes, stirring occasionally, until onions begin to soften. Stir in ancho powder, cumin, and oregano; cook 1 minute.
    4. Transfer mixture to multicooker; stir in enchilada sauce, water, and hot sauce. Seal following manufacturer's instructions; cook on HIGH 40 minutes.
    5. Release pressure following manufacturer's instructions. Stir in masa harina; simmer 2–3 minutes until chili thickens. Serve topped with cheese, sour cream, and remaining 1 cup onions.
    Chefs Tip: Reserve 3 cups chili to make Texas-Style Loaded Queso Dip.
