Ingredients
- 2 (8.5 oz) pouches cooked whole grain rice blend
- ½ bunch radishes with leafy tops
- 1 small red onion
- 1 pint grape tomatoes
- ¼ cup reduced-fat feta cheese
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon extra-virgin olive oil
- ½ teaspoon fresh ground pepper
Steps
- Heat rice following package instructions, then pour into large bowl and stir 30 seconds to cool slightly.
- Slice radishes thinly and chop leaves finely. Chop red onion (¼ cup); halve tomatoes. Add radishes, radish leaves, onions, and tomatoes to bowl with rice; stir until blended.
- Combine in separate bowl: feta, vinegar, mustard, oil, and pepper; whisk until blended. Stir dressing into salad and serve.
