Radish and Grains Salad

Radish and Grains Salad
Total Time:
10 minutes


2 (8.5-oz) pouches precooked whole grain rice blend
1/2 bunch radishes (with leafy tops)
1 small red onion, finely chopped
1 pint grape tomatoes, halved
1/4 cup reduced-fat feta cheese
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1 tablespoon extra-virgin olive oil
1/2 teaspoon fresh ground pepper


  1. Heat rice following package instructions, then pour into large bowl and stir 30 seconds to cool slightly.
  2. Slice radishes thinly and chop leaves finely. Chop red onion (1/4 cup); halve tomatoes. Add radishes, leaves, onions, and tomatoes to bowl with grains; stir until blended.
  3. Combine in separate bowl: feta, vinegar, mustard, oil, and pepper; whisk until blended. Stir dressing into salad and serve.
