Ingredients
- 1 lb Publix Deli Imported Aged Cheddar Cheese
- 6 tablespoons unsalted butter
- 8 oz trinity mix (diced fresh onions, bell peppers, and celery)
- 2 teaspoons seafood (or creole) seasoning
- 6 tablespoons flour
- 24 oz lager beer
- 4 cups half-and-half (or whole milk)
Steps
- Shred cheese. Preheat large stockpot on medium 2–3 minutes. Add butter, then add trinity mix and seasoning. Cook 3–4 minutes, stirring occasionally, until tender.
- Sprinkle flour over mix; stir until absorbed. Add beer and bring to a simmer, whisking occasionally.
- Reduce heat to low, add half-and-half, and simmer 10 minutes, stirring occasionally. Add cheese and whisk until melted.
Other Preparation Methods
- Appetizer: Slice and serve with other Deli gourmet cheeses, salami, pepperoni, crackers, and olives.
- Garnish: Shred cheddar and use to top mashed or baked potatoes.
