Ingredients

  • 3 medium zucchini, sliced
  • 1 red onion
  • ⅓ cup crumbled garlic-herb feta cheese
  • ¼ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ½ cup Greek vinaigrette

Steps

    1. Cut zucchini into ¼-inch-thick slices. Slice onion, then cut slices in half (about 1 ½ cups).
    2. Place all ingredients in salad bowl. Toss until evenly coated; serve.
