- 3 medium zucchini, sliced
- 1 red onion
- ⅓ cup crumbled garlic-herb feta cheese
- ¼ teaspoon kosher salt
- ¼ teaspoon pepper
- ½ cup Greek vinaigrette
Steps
- Cut zucchini into ¼-inch-thick slices. Slice onion, then cut slices in half (about 1 ½ cups).
- Place all ingredients in salad bowl. Toss until evenly coated; serve.
