Zesty Turkey Pie with Creamy Sauce

Ingredients

  • 1 (15 oz) can black beans in sauce
  • 1 (10 oz) can tomatoes with green chilies
  • 1 (15 oz) package rolled piecrusts
  • 1 (16 oz) package ground turkey
  • 1 cup salsa con queso, divided
  • ½ cup sour cream

Steps

    1. Preheat oven to 400°F. Drain beans and tomatoes with green chilies, then place both in large bowl.
    2. Unroll 1 piecrust and place in ungreased 9-inch pie dish, pressing dough firmly into bottom and up sides. Prick holes in bottom and sides of crust with a fork. Bake 11–13 minutes until golden
    3. Meanwhile, preheat large, nonstick sauté pan on medium-high 2–3 minutes. Place turkey in pan; brown 5–7 minutes, stirring to crumble meat, until no pink remains and turkey is 165°F; drain. Add turkey and ½ cup salsa con queso to bowl with beans mixture; stir to combine.
    4. Remove pie dish from oven, then spoon turkey mixture evenly into crust. Top with remaining piecrust; press edges of top and bottom crusts together to seal (or crimp in a decorative way if desired). Cut slits in top crust; bake 18–20 minutes until crust is golden and center is set.
    5. Combine sour cream and remaining ½ cup salsa con queso in microwave-safe dish; microwave 1 minute or until warm. Cut pie into 8 slices; serve with sauce.
