Whole Roasted Carrots

Ingredients

  • 2 lb whole carrots, peeled
  • 2 whole heads garlic
  • ¼ cup olive oil
  • 2 teaspoons Mediterranean spiced sea salt
  • 2 tablespoons fresh Italian parsley, coarsely chopped

Steps

    1. Preheat oven to 425°F. Peel carrots. Slice garlic in half cross-wise. Place carrots and garlic on baking sheet. Coat with oil and spiced salt.
    2. Bake 25–30 minutes, turning halfway, or until carrots and garlic are tender. Chop parsley and sprinkle over top. Serve.
