Ingredients
- 2 lb whole carrots, peeled
- 2 whole heads garlic
- ¼ cup olive oil
- 2 teaspoons Mediterranean spiced sea salt
- 2 tablespoons fresh Italian parsley, coarsely chopped
Steps
- Preheat oven to 425°F. Peel carrots. Slice garlic in half cross-wise. Place carrots and garlic on baking sheet. Coat with oil and spiced salt.
- Bake 25–30 minutes, turning halfway, or until carrots and garlic are tender. Chop parsley and sprinkle over top. Serve.
