Ingredients

  • ⅔ cup unsalted butter, softened
  • 4 oz white baking chocolate, coarsely chopped
  • ½ cup dried cherries, coarsely chopped
  • Cooking spray
  • 2 cups brown sugar
  • 2 large eggs (or ½ cup egg substitute)
  • 1 tablespoon cream sherry (or cherry juice) (optional)
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon kosher salt
  • 2 ¼ cups all-purpose flour
  • 1 cup chopped walnuts

Prep

    • Preheat oven to 350°F.
    • Chop chocolate and cherries.

Steps

    1. Coat 13- × 9-inch baking dish with cooking spray. Beat butter with an electric mixer on medium speed for 30 seconds in a large mixing bowl. Add brown sugar; beat 3–4 minutes or until fluffy. Beat in eggs, sherry (or juice), vanilla, baking powder, and salt until combined. Add flour; beat just until combined. Gently stir in walnuts, chocolate, and cherries. Spread mixture evenly into baking dish.
    2. Bake 28–30 minutes or until golden and center is set. Cool completely in pan before cutting into bars. Serve.
