Ingredients
- ⅔ cup unsalted butter, softened
- 4 oz white baking chocolate, coarsely chopped
- ½ cup dried cherries, coarsely chopped
- Cooking spray
- 2 cups brown sugar
- 2 large eggs (or ½ cup egg substitute)
- 1 tablespoon cream sherry (or cherry juice) (optional)
- 2 teaspoons vanilla extract
- 1 ½ teaspoons baking powder
- ¼ teaspoon kosher salt
- 2 ¼ cups all-purpose flour
- 1 cup chopped walnuts
Prep
- Preheat oven to 350°F.
- Chop chocolate and cherries.
Steps
- Coat 13- × 9-inch baking dish with cooking spray. Beat butter with an electric mixer on medium speed for 30 seconds in a large mixing bowl. Add brown sugar; beat 3–4 minutes or until fluffy. Beat in eggs, sherry (or juice), vanilla, baking powder, and salt until combined. Add flour; beat just until combined. Gently stir in walnuts, chocolate, and cherries. Spread mixture evenly into baking dish.
- Bake 28–30 minutes or until golden and center is set. Cool completely in pan before cutting into bars. Serve.
