Ingredients
- 1 (4-count) package seedless watermelon wedges (about 1 ½ lb)
- 4 limes, for juice
- ¼ cup honey
- ⅛ teaspoon kosher salt
Steps
- Arrange watermelon wedges flat on baking sheet. Freeze 45–60 minutes until very firm. Juice limes (¼ cup). Combine lime juice, honey, and salt; whisk until blended.
- Grate flesh of 1 watermelon wedge into each serving bowl (about 1 cup each). Drizzle with honey-lime mixture. Serve immediately.
Chef's Tip: Spread 1 lb fresh seedless watermelon chunks on baking sheet and freeze until firm (30–40 minutes). Place in food processor or high speed blender and pulse until desired consistency. Add 1–2 tablespoons water if needed to help break up chunks.
