Ingredients
- 4 cups fresh watermelon chunks
- 1 seedless cucumber
- 1 red chili (or jalapeño) pepper
- 2 shallots
- ⅓ cup lightly salted cashews (about 2 oz)
- 0.25 oz fresh mint
- 0.25 oz fresh basil
- ¼ bunch fresh cilantro
- ½ cup refrigerated ginger dressing, divided
- 4 (16 oz) glass jars with lids
Steps
- Cut watermelon and cucumber into 1-inch cubes. Chop pepper finely, removing membranes and seeds if desired; chop shallots finely. Chop cashews, mint, basil, and cilantro coarsely.
- Divide ingredients among jars in this order: dressing, watermelon, cucumbers, shallots, peppers, mint, basil, cilantro, and cashews. Seal jars and chill 30 minutes (or overnight). Shake before serving.
