Ingredients
- 2 cups watermelon, cut into bite-size pieces
- 2 medium tomatoes, cut into bite-size pieces
- 1 (5-oz) container fresh salad greens
- ½ cup feta cheese
- ½ cup champagne vinaigrette
Steps
- Combine watermelon and tomatoes. Place greens in salad bowl; top with watermelon and tomato.
- Finish with cheese and drizzle with dressing. Toss and serve.

Granita: Combine 4 cups chopped watermelon, 1 teaspoon black pepper, ½ cup water, ½ cup sugar, and 2 tablespoons chopped fresh mint in food processor; blend 1 minute and place in 13- x 9-inch dish. Cover and place in freezer 20 minutes. Then use fork to scrape mixture every 20 minutes until large ice crystals form. Transfer to covered airtight container until ready to serve.
