1 small shallot, finely chopped
2 tablespoons olive oil
8 oz presliced white mushrooms
3 tablespoons pure maple syrup
2 tablespoons deli-style mustard
2 tablespoons sherry (or white wine) vinegar
1 (6-oz) bag fresh baby spinach
1 (2.3-oz) package walnut pieces
Steps
Preheat large sauté pan on medium-high 2–3 minutes. Chop shallot. Place oil, shallots, and mushrooms in pan; cook and stir 3–4 minutes or until mushrooms soften.
Whisk syrup, mustard, and vinegar until blended, then add to mushrooms; cook 1–2 minutes or until warm. Place spinach in salad bowl and add mushroom mixture; toss to coat. Top with walnuts and serve
