Warm Brussels Sprouts and Apple Salad

Ingredients

  • 16 oz fresh Brussels sprouts
  • 1 crisp, sweet apple
  • 4 slices thick-cut bacon
  • ½ cup matchstick carrots
  • ⅓ cup dried cherries (or cranberries)
  • ¼ cup lemon vinaigrette
  • 1 teaspoon pepper
  • ¼ cup Deli blue cheese

Steps

    1. Trim and halve Brussels sprouts. Core apple and cut into ½-inch cubes.
    2. Chop bacon and place in large sauté pan on medium (wash hands); cook 6–8 minutes, stirring occasionally, until crisp. Remove bacon with slotted spoon, leaving 2 tablespoons drippings in pan.
    3. Increase heat to medium-high. Add sprouts to pan; cook 2–3 minutes, stirring occasionally, until browned. Stir in apples, carrots, and dried cherries. Cook and stir 2–3 minutes until crisp-tender.
    4. Add vinaigrette and pepper; stir until well coated and warm. Divide mixture among serving plates. Crumble cheese over top and sprinkle with bacon. Serve.
