Warm Bacon-Apple Slaw

Ingredients

For dressing
  • 8 slices thick-cut bacon
  • 1 cup apple vinaigrette
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic stir-in paste
For slaw
  • 16 oz coleslaw mix
  • 1 small red onion
  • 1 small red bell pepper
  • 1 large Granny Smith apple

Steps

    1. Prepare dressing. Cut bacon into ½-inch slices (wash hands); place in large sauté pan on medium. Cook 12–15 minutes, stirring occasionally, until bacon is crisp. Remove bacon, leaving drippings in pan.
    2. Reduce heat to low. Add vinaigrette, whole-grain mustard, maple syrup, Dijon mustard, and garlic paste; whisk until blended.
    3. Prepare slaw. Core apple; cut apple, onion (about 1 cup), and bell pepper (about 1 cup) into ¼-inch-wide strips. Place in large bowl: coleslaw mix, apples, onions, bell peppers, and bacon. Pour in warm dressing and toss to coat. Serve immediately.
