Ingredients
- 1 cup reduced-sodium chicken broth (or stock)
- ⅓ cup water
- 1 (15 oz) bag steam-in-bag frozen mixed vegetables (carrots, corn, peas, green beans, and lima beans)
- 1 tablespoon salted butter
- 1 (6.2 oz) box quick-cooking long grain & wild rice blend
Steps
- Place broth, water, vegetables, and butter in microwave-safe bowl. Cover and microwave on HIGH 8 minutes, stirring halfway through cook time, or until vegetables begin to soften.
- Stir in rice and seasoning packet from rice. Cover and microwave 5 more minutes. Let stand 3–5 minutes until water is absorbed. Serve.
