Ingredients
- 1 medium sweet onion, thinly sliced
- 3 cloves garlic, finely chopped
- 1–2 carrots
- 1 medium green bell pepper
- 1 tablespoon olive oil
Steps
- Peel and slice onion; chop garlic. Trim carrots and peppers; cut into ¼-inch pieces (½ cup each).
- Preheat oil in large sauté pan on high for 2–3 minutes. Add remaining ingredients; cook 9–11 minutes, stirring constantly, or until vegetables are tender.
Other Preparation Methods
- Grill: Preheat grill. Slice 1 onion into ½-inch-thick rings and grill in a grill basket over direct heat for 5–7 minutes or until tender.
- Bake: Preheat oven to 425°F. Slice 1 onion; toss with beaten egg and coat with bread crumbs. Place on foil-lined baking sheet; drizzle with oil and sprinkle with salt. Bake 10–12 minutes or until golden.
