Ingredients

  • 12 oz wide egg noodles
  • Cooking spray
  • ½ cup canola oil
  • 6 large eggs
  • 2 tablespoons vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 cup granulated sugar, divided
  • ⅓ cup panko breadcrumbs
  • ⅓ cup almond flour
  • 1 teaspoon ground cinnamon

Steps

    1. Bring water to a boil for noodles; cook following package instructions, then drain.
    2. Meanwhile, preheat oven to 350°F. Coat 13- x 9-inch baking dish with spray. Place in medium bowl: oil, eggs, vanilla, baking powder, salt, and ½ cup sugar. Beat with electric mixer until blended. Combine in second bowl: breadcrumbs, almond flour, cinnamon, and remaining ½ cup sugar until blended.
    3. Spread drained noodles in prepared baking dish. Pour egg mixture evenly over noodles, then sprinkle crumb mixture over top. Bake 25–30 minutes until edges begin to brown and center is 160°F. Let stand to cool 10 minutes before slicing. Serve.
