Upside-Down Bananas Foster Cake

Ingredients

  • 3 large bananas
  • 2 tablespoons unsalted butter
  • 1 cup caramel sauce
  • ¾ teaspoon rum extract
  • 1 (15.25 oz) package Duncan Hines Classic Yellow Cake Mix
  • 1 cup reduced-fat milk
  • ½ cup cinnamon applesauce
  • 3 large eggs (or ¾ cup egg substitute)
  • Cooking spray
  • Vanilla ice cream or whipped topping (optional for serving)

Steps

    1. Preheat oven to 350°F. Cut bananas into 1-inch-thick slices. Place butter and caramel sauce in microwave-safe bowl; microwave on HIGH 1–2 minutes, stirring every 30 seconds, until butter is melted. Stir in rum extract.
    2. Prepare cake mix (using milk, applesauce, and eggs only). Coat deep, 9-inch cake pan with spray. Pour caramel mixture into bottom of pan, then arrange bananas flat-side down in tight, even layer on bottom; pour in batter.
    3. Bake 40–45 minutes until cake begins to pull away from sides of pan and center is set. Let stand to cool 30 minutes. Place large plate (or platter) over pan, grasp plate and pan carefully (using oven mitts, if needed), and invert, letting cake settle onto plate. Serve warm with whipped topping or ice cream, if using.
