Turkey Shepherd’s Pie
Ingredients
- 1 tablespoon garlic-herb butter
- 8 oz frozen trinity mix (fresh diced onions, bell peppers, celery)
- 1 (16-oz) package ground turkey
- 1 (8-oz) can mushroom pieces (undrained)
- ⅛ teaspoon pepper
- 1 tablespoon flour
- 1 (0.75-oz) packet mushroom gravy mix
- 1 (8-oz) can tomato sauce
- 1 (24-oz) package refrigerated mashed potatoes
- Cooking spray
Steps
- Place oven rack 6 inches from broiler, then preheat oven on broil. Preheat large sauté pan on medium-high 2–3 minutes. Add butter and trinity mix to pan; cook 3 minutes, stirring occasionally, or until vegetables begin to brown.
- Stir in turkey; cook 5–7 minutes, stirring to crumble meat, until meat is brown and 165°F. Stir in mushrooms, pepper, flour, gravy mix, and tomato sauce. Cook 6–8 minutes, stirring occasionally, or until gravy thickens.
- Microwave potatoes following package instructions. Spoon turkey mixture into 2-quart baking dish. Spread potatoes evenly over turkey mixture. Coat potatoes with spray; broil 5–6 minutes or until golden. Serve. (Makes 6 servings.)
Broccoli and Cheddar
Ingredients
- 1 (12-oz) package fresh broccoli florets
- ½ cup water
- 1 (8-oz) package processed bar cheese
Steps
- Place broccoli and water in microwave-safe bowl; cover and microwave on HIGH for 2 minutes. Cut cheese into 1-inch pieces.
- Drain broccoli. Add cheese; cover and microwave 2 more minutes or until broccoli is tender.
- Stir until well blended. Let stand 5–6 minutes (uncovered) or until cheese thickens. Serve.
Serving Suggestions
- Complete your meal with fresh salad blend, dinner rolls, and fruit parfaits for dessert.
- This is a perfect weeknight meal that will easily feed a family of four, with leftovers.
