Turkey Shepherd’s Pie

Ingredients

  • 1 tablespoon garlic-herb butter
  • 8 oz frozen trinity mix (fresh diced onions, bell peppers, celery)
  • 1 (16-oz) package ground turkey
  • 1 (8-oz) can mushroom pieces (undrained)
  • ⅛ teaspoon pepper
  • 1 tablespoon flour
  • 1 (0.75-oz) packet mushroom gravy mix
  • 1 (8-oz) can tomato sauce
  • 1 (24-oz) package refrigerated mashed potatoes
  • Cooking spray

Steps

    1. Place oven rack 6 inches from broiler, then preheat oven on broil. Preheat large sauté pan on medium-high 2–3 minutes. Add butter and trinity mix to pan; cook 3 minutes, stirring occasionally, or until vegetables begin to brown.
    2. Stir in turkey; cook 5–7 minutes, stirring to crumble meat, until meat is brown and 165°F. Stir in mushrooms, pepper, flour, gravy mix, and tomato sauce. Cook 6–8 minutes, stirring occasionally, or until gravy thickens.
    3. Microwave potatoes following package instructions. Spoon turkey mixture into 2-quart baking dish. Spread potatoes evenly over turkey mixture. Coat potatoes with spray; broil 5–6 minutes or until golden. Serve. (Makes 6 servings.)
