Ingredients
- 6 cups water
- 2 tablespoons reduced-sodium chicken bouillon base
- 1 (12 oz) bag GreenWise frozen turkey meatballs
- 1 (15.5 oz) can reduced-sodium white beans
- 1 (10 oz) bag frozen riced cauliflower medley
- 2 tablespoons + 4 teaspoons basil pesto, divided
- 5 cups GreenWise organic baby spinach
- ½ teaspoon pepper
- 4 teaspoons grated Parmesan cheese
Steps
- Bring water to a boil in large stockpot on medium-high. Stir in bouillon base and meatballs; cover and cook 8 minutes. Drain and rinse beans.
- Reduce heat to medium. Stir in cauliflower, beans, 2 tablespoons pesto, and spinach; cook 3–4 more minutes until cauliflower is tender and meatballs are 165°F. Ladle soup into bowls; top evenly with pepper, remaining 4 teaspoons pesto, and Parmesan. Serve.
