Tropical Dragon Fruit Smoothies

Ingredients

  • 2 white-fleshed dragon fruit (+ more, optional for garnish)
  • 1 large banana
  • 1 lb tropical fruit salad (cut fresh pineapples, strawberries, and kiwifruit)
  • 1 cup full-fat canned coconut milk
  • ¼ cup light agave nectar (or honey)
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • 4 cups ice
  • 2 cups frozen raspberries
  • Mint sprigs (optional for garnish)

Steps

    1. Cut dragon fruit in half and scoop out inner flesh (about 3 cups). Peel banana. Remove strawberries from fruit salad.
    2. Place in blender: dragon fruit, banana, pineapples, kiwifruit, coconut milk, agave, vanilla, salt, and ice; blend until smooth. Remove and reserve half.
    3. Add raspberries and strawberries to remaining smoothie in blender; blend until smooth. Pour mixture in blender into 4 glasses; top with reserved smoothie. Garnish with dragon fruit wheels and mint springs, if using.

    Chef's Tip: Red-fleshed dragon fruit is a good substitute for raspberries in this smoothie.
