Ingredients
- ½ cup vegetable oil
- 2 green (unripe) plantains
- 1 teaspoon kosher salt
- Minced fresh cilantro (optional for serving)
- Mojo sauce (optional for serving)
Steps
- Heat oil in heavy sauté pan on medium 3–5 minutes. Peel plantains and cut into 1-inch-thick slices.
- Fry plantain slices (in batches) 4–5 minutes, flipping occasionally, until light golden; drain on paper towels. Flatten plantains to about ¼ inch thick using rolling pin (or mallet). Fry flattened slices 4–5 more minutes, flipping occasionally, until golden on both sides. Sprinkle with salt and cilantro, if using; serve immediately with mojo sauce on the side, if using.
