"Tortally" Awesome Chocolate Ice Cream Sandwiches

Ingredients

  • 1 (16-ct) package double-chocolate pecan cookies
  • 3 oz slice flourless chocolate torte, divided
  • 2 cups chocolate truffle ice cream

Steps

    1. Place 8 cookies, face down, on a cutting board or baking sheet. Slice torte into 8 equal pieces (the same size as cookie).
    2. Place 1 scoop (¼ cup) of ice cream onto each cookie, then add 1 piece of torte.
    4. Finish with remaining 8 cookies on top of torte and serve immediately (or wrap individually with parchment paper and freeze until ready to serve).
