Ingredients
- 4 oz feta cheese
- 12 oz Sugar Bomb Tomatoes
- ½ seedless cucumber
- 1 cup tri-pepper blend (diced fresh green, red, and yellow bell peppers)
- ½ cup Greek vinaigrette
Steps
- Crumble cheese. Halve tomatoes, if desired. Halve cucumber lengthwise, then slice thinly (1 cup).
- Combine all ingredients (except vinaigrette) in serving bowl. Pour in vinaigrette; toss to coat. Chill until ready to serve.
Other Preparation Methods
- Quick kimchi: Halve 12 oz Sugar Bomb Tomatoes and place in colander; sprinkle with 1 teaspoon kosher salt and let stand 30 minutes. Combine in small bowl: 2 tablespoons white vinegar, 1 teaspoon garlic stir-in paste, 1 tablespoon gochujang, 2 teaspoons fish sauce, 1 teaspoon sugar, and 2 tablespoons sliced green onions. Add tomatoes; toss to coat. Chill until ready to serve.
