Tangy Lime Grilled Red Snapper

Ingredients

  • 1 shallot
  • 2 tablespoons fresh cilantro
  • 1 tablespoon fish (or Worcestershire) sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 4 (6 oz) red snapper fillets, skin removed (about 1 ½ lb)
  • 1 teaspoon kosher salt
  • Cooking spray

Steps

    1. Preheat grill (or grill pan) on medium. Chop shallot and cilantro finely. Combine shallots, cilantro, fish sauce, lime juice, and brown sugar.
    2. Season fish with salt and coat with spray (wash hands). Grill 3–4 minutes on each side until fish is grill-marked and centers of fillets flake easily and are 145°F. Drizzle with sauce and serve.
    Note: Always check fish for bones.

    • Bake: Preheat oven to 400°F. Season 4 (6 oz) snapper fillets, skin removed, with kosher salt and pepper. Arrange on foil-lined baking sheet; top with 1 cup fresh salsa. Bake 12–14 minutes until centers flake easily and are 145°F.
    • Sauté: Heat 1 tablespoon olive oil in large sauté pan on medium 2–3 minutes. Season 4 (6 oz) snapper fillets, skin removed, with 2 teaspoons steak seasoning and place in pan. Cook 4–5 minutes on each side until centers flake easily and are 145°F.
