Ingredients
- 1 shallot
- 2 tablespoons fresh cilantro
- 1 tablespoon fish (or Worcestershire) sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 4 (6 oz) red snapper fillets, skin removed (about 1 ½ lb)
- 1 teaspoon kosher salt
- Cooking spray
Steps
- Preheat grill (or grill pan) on medium. Chop shallot and cilantro finely. Combine shallots, cilantro, fish sauce, lime juice, and brown sugar.
- Season fish with salt and coat with spray (wash hands). Grill 3–4 minutes on each side until fish is grill-marked and centers of fillets flake easily and are 145°F. Drizzle with sauce and serve.
Other Preparation Methods
- Bake: Preheat oven to 400°F. Season 4 (6 oz) snapper fillets, skin removed, with kosher salt and pepper. Arrange on foil-lined baking sheet; top with 1 cup fresh salsa. Bake 12–14 minutes until centers flake easily and are 145°F.
- Sauté: Heat 1 tablespoon olive oil in large sauté pan on medium 2–3 minutes. Season 4 (6 oz) snapper fillets, skin removed, with 2 teaspoons steak seasoning and place in pan. Cook 4–5 minutes on each side until centers flake easily and are 145°F.
