Tanghulu (Chinese-Style Candied Fruit)

Ingredients

  • 1 lb tropical fruit salad (cut fresh pineapple, kiwifruit, and strawberries)
  • 1 lb fresh strawberry and grape salad
  • 4 cups ice
  • 6 cups water, divided
  • 1 cup dry rice
  • 4 cups granulated sugar
  • 12 (12-inch) wooden skewers

Steps

    1. Arrange fruit in single layer on paper towel–lined baking sheet. Place ice and 4 cups water in large bowl. Thread 4 pieces of the same fruit onto each skewer. Place rice in large sturdy mug or glass for finished skewer to rest.
    2. Place sugar and remaining 2 cups water in medium saucepan, whisk to blend. Bring to a boil on medium-high; cook 15–18 minutes (do not stir) until sugar reaches 300°F on a candy thermometer. Reduce heat to warm.
    3. Dip fruit skewers carefully into sugar mixture, letting excess drip off. Dip immediately into ice water, making sure not to touch other skewers or the bottom of bowl; let chill about 1 minute. Remove skewers and place skewer-down into rice. Repeat with remaining skewers. Serve.

    Chef's Tip: You can test if the sugar is ready by dipping an empty skewer into sugar mixture then into ice water. If it hardens immediately, you're ready to go.
