Tandoori-Style Grilled Halibut

Ingredients

  • 1 cup plain, whole milk Greek yogurt
  • 1 tablespoon curry powder
  • 1 tablespoon minced garlic
  • 4 (5.25 oz) fresh GreenWise halibut fillets (about 21 oz)
  • Cooking spray
  • 1 teaspoon kosher salt
  • 1 tablespoon fresh cilantro, finely chopped

Steps

    1. Preheat grill (or grill pan) on medium. Combine yogurt, curry powder, and garlic (reserving ½ cup). Coat fillets with remaining yogurt mixture (wash hands); marinate 10 minutes (or up to 1 hour).
    2. Coat fish with spray and sprinkle with salt. Grill 3–4 minutes on each side or until fish is grill-marked and opaque. Serve with reserved yogurt mixture and cilantro.
    Note: Always check fish for bones and cook to an internal temperature of 145°F.
Other Preparation Methods
    • Sauté: Preheat large sauté pan on medium-high. Season 4 halibut fillets with salt and pepper (wash hands). Place 1 tablespoon oil in pan, then add fish; cook 3–4 minutes on each side or until fish is opaque and separates easily. Add 10 oz lemon-dill finishing sauce to pan; heat until warm.
    • Broil: Preheat oven to broil. Brush 4 halibut fillets lightly with olive oil; season with 1 tablespoon garlic-herb seasoning. Coat baking sheet with oil; place fish on baking sheet and broil 4–5 minutes or until fish is opaque and separates easily.
