Sweet Wine Poached Pears with Cream Sauce

Ingredients

  • 6 medium pears, peeled and cored
  • 1 (750-ml) bottle sweet white wine (Moscato or Riesling)
  • 1 vanilla bean, split and seeds scraped
  • 2 lemons, for zest
  • 8 oz mascarpone cheese, coarsely chopped

Steps

    1. Preheat large stockpot on medium-high 2–3 minutes. Place pears, wine, vanilla bean, and zest (1 tablespoon) in pot; bring to a boil. Reduce to a simmer and cover; simmer 20–25 minutes or until pears are tender.
    2. Remove pears; whisk cheese into wine and bring to rolling boil; boil until liquid is reduced by about one-half. Serve pears with sauce.
Other Preparation Methods
    • Bake: Preheat oven to 400°F. Peel 6 pears and place on foil-lined baking sheet. Drizzle pears with ¼ cup honey, 2 tablespoons melted unsalted butter, and sprinkle with 2 tablespoons cinnamon sugar. Bake pears 16–18 minutes or until tender.
