Ingredients
- 1 peeled and cored pineapple
- 1 medium red onion
- 2 medium red (or green) bell peppers
- 1 package frozen beef (or pork) meatballs (14–16 oz)
- ⅓ cup brown sugar
- 1 tablespoon cornstarch
- ⅓ cup reduced-sodium soy sauce
- 1 tablespoon sriracha sauce
- 1 (12 ct) package slider rolls
Steps
- Cut pineapple (2 cups), onion, and bell peppers into 1-inch chunks. Place pineapples, onions, bell peppers, and meatballs in slow cooker.
- Combine brown sugar and cornstarch. Add soy sauce and sriracha; whisk until blended. Pour sauce over meatball mixture, then cover and cook on HIGH 1 ½–2 hours (or on LOW 3 hours) until meatballs are 160°F. Serve on slider rolls.
