Sweet-and-Spicy Meatball Lo Mein

Ingredients

  • 8 oz wheat (or regular) spaghetti pasta
  • 1 package frozen beef (or pork) meatballs (16–20 oz)
  • 1 tablespoon olive oil
  • ¼ cup fresh cilantro, coarsely chopped
  • 1 bag frozen Oriental stir-fry vegetables (10–14 oz, contains broccoli, carrots, pea pods, and red peppers)
  • ½ cup ginger teriyaki sauce
  • ½ cup classic barbecue sauce
  • ¼ teaspoon crushed red pepper (optional)

Steps

    1. Bring water to a boil for pasta. Cook pasta following package instructions. Microwave meatballs following package instructions.
    2. Preheat wok or large sauté pan on medium-high 2–3 minutes. Place oil in pan; add meatballs and cook 3–4 minutes, stirring often. Chop cilantro.
    3. Add vegetables to pan; cook and stir 2 minutes. Add teriyaki sauce, barbecue sauce, and red pepper; cover and cook 3–4 minutes, stirring often, or until vegetables are tender. Toss mixture with pasta; top with cilantro. Serve.
