Sweet-and-Sour Chicken Lo Mein

Ingredients

  • 8 oz whole wheat spaghetti pasta (about ⅔ box)
  • 1 lb fresh chicken tenderloins
  • Cooking spray
  • 1 ¼ cups sweet-and-sour sauce (11-12 oz)
  • 1 (12-oz) bag broccoli slaw

Steps

    1. Cook and drain pasta following package instructions. Cut chicken into bite-size pieces (wash hands).
    2. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Coat chicken with spray and place in pan; cook and stir 3–4 minutes or until browned.
    3. Reduce heat to low. Stir in sauce; simmer 5 minutes or until chicken is 165°F. Stir pasta and broccoli slaw into chicken; cook and stir 1 minute to coat evenly. Serve.
