Sweet and Smoky Pulled Pork

Ingredients

  • 1 large yellow onion
  • ¾ cup soy sauce
  • ¾ cup bourbon (or beef broth)
  • ⅔ cup apple cider vinegar
  • ¼ cup brown sugar
  • ¼ cup molasses
  • ¼ cup Worcestershire sauce
  • ¼ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ¼ teaspoon hot pepper sauce
  • 1 boneless pork Boston butt roast (about 5 lb)
  • Large zip-top bag
  • 6 cups apple wood smoking chips
  • Aluminum foil
  • 2 cups barbecue sauce

Steps

    1. Chop onion finely. Combine in medium saucepan: onions, soy sauce, bourbon, vinegar, brown sugar, molasses, Worcestershire sauce, salt, pepper, and hot sauce; bring to a boil on high. Reduce heat to low and cover; simmer 15 minutes. Remove marinade from heat, uncover, and let stand to cool.
    2. Place meat and one-half cooled marinade in bag (wash hands); seal bag and chill 24 hours to marinate, turning bag occasionally.
    3. Soak wood chips in water 1 hour.
    4. Preheat grill on medium. Place meat fat-side up on grill rack (discard marinade) and cover; smoke 4 ½–5 ½ hours until very tender and 190–195°F, basting meat occasionally with remaining half marinade during first 3 hours of smoking. (Add additional wood chips as needed, bearing in mind that too much smoke can make meat taste bitter.)
    5. Remove meat from grill; cover with foil and let stand 15 minutes, then shred using 2 forks. Microwave barbecue sauce 1–2 minutes until hot; toss pork with barbecue sauce. Serve.
