Sweet and Savory Pastry Bites

Ingredients

  • 2 (1.9 oz) packages frozen phyllo shells
  • Parchment paper
  • 2 medium sweet onions
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ⅓ cup red wine vinegar
  • ½ cup raspberry (or strawberry) preserves
  • 4 oz crumbled blue cheese
  • 1 tablespoon lightly dried parsley

Steps

    1. Preheat oven to 350°F. Line baking sheet with parchment. Halve onions and slice thinly.
    2. Place oil, onions, salt, and pepper in large sauté pan on medium. Cook 16–18 minutes, stirring occasionally, until onions are golden (lightly caramelized). Add vinegar to pan and stir to loosen any bits from bottom of pan. Cook 2 more minutes or until liquid is reduced by about one-half; remove pan from heat.
    3. Meanwhile, bake phyllo shells following package instructions. Let stand 5 minutes before removing from baking sheet.
    4. Fill shells evenly with preserves, onions, cheese, and parsley. Serve.
