Ingredients
- 1 ripe Hass avocado
- 1 lb cantaloupe (or honeydew) chunks (about 3 cups)
- 8 oz rotini pasta
- ⅓ cup lemon vinaigrette
- ½ teaspoon kosher salt
- 0.5 oz fresh basil
- 2 cups shredded mozzarella cheese

Steps
- Bring water to a boil for pasta. Halve avocado and scoop out flesh; cut melon and avocado into bite-size pieces.
- Combine melon, avocado, vinaigrette, and salt in large bowl, stirring gently to coat evenly. Cook and drain pasta following package instructions; chill 5 minutes to cool.
- Chop basil coarsely (⅓ cup). Stir pasta and cheese into melon mixture, then sprinkle with basil. Chill until ready to serve. (Makes 6 servings.)
