Strawberry Shortcake Ice Cream Pie

Ingredients

  • 3 cups strawberry (or vanilla) ice cream
  • 2 tablespoons unsalted butter
  • 12 Bakery sugar cookies (+ more, optional for serving)
  • ¼ teaspoon kosher salt
  • Plastic wrap
  • 16 oz fresh strawberries
  • 2 tablespoons sugar
  • Whipped cream (optional for serving)

Steps

    1. Set ice cream out to soften 30 minutes. Melt butter. Place cookies in food processor bowl; process into fine crumbs. Pour cookie crumbs into 9-inch pie dish. Add butter and salt; combine with fingers until mixture is consistency of wet sand. Press mixture lightly into bottom and up sides of dish to form crust.
    2. Spread ice cream evenly over crust. Press plastic wrap onto surface of ice cream to prevent ice crystals. Freeze 2 hours or until firm.
    3. Meanwhile, slice strawberries thinly. Place in bowl with sugar; stir to coat. Cover and chill until ready to serve.
    4. Slice pie and top with strawberries, garnish with whipped cream and additional cookies, if using. Serve.
