Ingredients
- 1 medium head bok choy
- 3 tablespoons vegetable oil
- 2 teaspoons garlic stir-in paste
- 2 teaspoons ginger stir-in paste
- ¼ cup rice vinegar
- ¼ cup hoisin sauce
- 1 teaspoon pepper
Steps
- Remove leaves from bok choy; chop leaves (2 cups), then slice stems into ½-inch pieces (4 cups). Preheat oil in large sauté pan on medium-high 2–3 minutes. Add bok choy stems, garlic paste, and ginger paste; cook and stir 2 minutes.
- Add vinegar and bok choy leaves to pan; cover and cook 2 minutes. Remove from heat, stir in hoisin sauce and pepper, and serve.
Other Preparation Methods
- Microwave: Chop 1 head bok choy coarsely and place in microwave-safe bowl with 1 tablespoon water. Microwave on HIGH 3–4 minutes until leaves are bright green.
- Grill: Preheat grill on medium. Chop 1 head bok choy coarsely. Place in foil with sliced peppers and mushrooms, oil, and Italian seasoning. Seal packet and grill over indirect heat 8–10 minutes until vegetables are tender and bok choy leaves are bright green.
