Steaks with Avocado-Chile Sauce and Chili Barbecue Sauce

Ingredients

  • 4 teaspoons chili powder, divided
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic salt
  • 1 ½ lb grilling steaks (such as New York strip, ribeye, or tenderloin)
  • ½ cup salsa verde
  • ¼ cup prepared guacamole
  • 1 cup sweet and spicy barbecue sauce
  • 2 tablespoons chipotle pepper sauce

Steps

    1. Preheat grill (or grill pan). Combine 2 teaspoons chili powder, brown sugar, and garlic salt; coat steaks with mixture.
    2. Place steaks on grill; grill 3–4 minutes on each side and until 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Remove steaks from grill and let stand 5 minutes before slicing.
    3. Combine salsa verde and guacamole. Combine barbecue sauce, chipotle sauce, and remaining 2 teaspoons chili powder. Slice steaks. Serve steaks with sauces.
    NOTE: The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steaks, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
