Steaks with Seasoned Lemon Butter
4 servings
30 minutes total

Ingredients

  • ½ cup salted butter
  • 1 lemon, for zest/juice
  • 1 ½ lb boneless steaks (such as ribeye, top sirloin fillet, or New York strip)
  • Cooking spray
  • 3 teaspoons lemon butter–garlic seasoning, divided
  • 1 teaspoon garlic stir-in paste
  • 1 tablespoon dried parsley

Steps

    1. Set butter out to soften. Preheat grill (or grill pan) on medium-high. Zest lemon (1 teaspoon), then juice (1 tablespoon).
    2. Coat steaks with spray and 2 teaspoons seasoning, then place on grill (wash hands). Cook 4–5 minutes on each side until grill-marked and 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Transfer steaks to cutting board and let stand 5 minutes before slicing; temperature will rise 5–10°F during this time.
    3. Combine butter, lemon zest, lemon juice, garlic paste, parsley, and remaining 1 teaspoon seasoning; stir until well blended. Top each serving of steak with 1 tablespoon butter; serve.

Chef's Tip: Serve remaining butter with cooked scallops, shrimp, or vegetables.

The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steak, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
