Sriracha-Glazed Salmon with Cucumber-Plum Salad

Ingredients

  • 3 limes, for zest/juice
  • ½ cup reduced-sodium soy sauce
  • 4 tablespoons sriracha sauce, divided
  • 1 tablespoon ginger stir-in paste
  • 1 tablespoon minced garlic
  • ½ cup rice vinegar, divided
  • 4 (6 oz) fillets sockeye salmon (about 1 ½ lb)
  • 2 tablespoons honey
  • ¼ cup sesame oil
  • 5 fresh black (or red) plums
  • 1 seedless cucumber
  • 1 fresh red chili pepper
  • ½ cup sliced fresh green onions
  • Cooking spray

Steps

    1. Zest limes (1 teaspoon), then juice (3 tablespoons). Combine lime zest, lime juice, soy sauce, ginger paste, garlic, 3 tablespoons sriracha sauce, and ¼ cup vinegar in shallow dish (or large zip-top bag). Add salmon and turn to coat (wash hands); let stand to marinade 30 minutes (or up to 1 hour).
    2. Meanwhile, combine honey, sesame oil, and remaining 1 tablespoon sriracha sauce and ¼ cup vinegar in large bowl; whisk to blend. Peel plums if desired, then quarter, discarding pits. Halve cucumber lengthwise, then cut into ½-inch-thick diagonal slices. Halve chili pepper, discarding seeds and membranes if desired, then slice crosswise thinly. Add plums, cucumbers, chilies, and green onions to bowl with honey-sesame mixture; toss to coat.
    3. Preheat grill (or grill pan) on medium. Remove salmon from marinade; place marinade in small saucepan and bring to a simmer on medium-low, then cook 5–6 minutes until liquid is reduced by about one-half and glaze is thickened.
    4. Coat salmon with spray; grill salmon 3–4 minutes on each side until centers of fillets flake easily and are 145°F. Baste salmon with glaze during last 2 minutes of cook time. Top salmon with remaining sauce; serve with salad.
