Spring Cobb Salad

Ingredients

  • 6 oz asparagus tips
  • 1 shallot
  • 1 cup orange (or citrus) segments
  • 1 bag butter lettuce blend (5–6 oz)
  • ⅓ cup herb (or avocado) ranch dressing
  • 4 oz crumbled feta cheese
  • 1 (3.5 oz) bag cranberry and glazed walnut salad topping

Steps

    1. Chop asparagus and shallot coarsely; drain oranges. Toss salad greens with dressing until coated; spread in single layer on serving platter.
    2. Place asparagus, shallots, oranges, cheese, and salad topping in rows over greens. Serve immediately.
