Spinach Pasta Dough

Ingredients

  • 4 oz frozen chopped spinach
  • 3 cups all-purpose flour
  • 4 large eggs
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons kosher salt
  • Plastic wrap

Steps

  1. Food processor method
    1. Thaw spinach following package instructions; squeeze liquid from spinach (about ⅓ cup). Place flour, eggs, oil, salt, and spinach in bowl of food processor. Process in long pulses 1 minute or until large clumps of dough form and pull away from edges of bowl.
    2. Dust work surface lightly with flour; turn mixture onto work surface and knead until dough comes together (dough should be slightly tacky but hold together). Wrap tightly in plastic wrap and let rest 20 minutes (or chill up to 4 hours).
    Countertop method
    1. Thaw spinach following package instructions; squeeze liquid from spinach (about ⅓ cup). Shape flour into mound on work surface. Make well in center of flour; add eggs, oil, salt, and spinach to well. Whisk egg mixture with fork, then whisk flour slowly from sides of well into wet ingredients.
    2. Continue whisking until soft dough forms. Work remaining dry flour into wet dough (spray with water as needed to adjust consistency; dough should be slightly tacky but hold together). Wrap tightly in plastic wrap and let rest 20 minutes (or chill up to 4 hours).
