Spicy Peanut Chicken and Rice with Pineapple-Ginger Slaw

Spicy Peanut Chicken and Rice

Ingredients

  • 1 (6.2 oz) package fast cook long grain & wild rice blend
  • 2 cups frozen cooked, diced chicken breast
  • 2 cups frozen Asian medley vegetables (seasoned carrots, broccoli, baby corn, and sugar snap peas)
  • 1 ½ cups water
  • ½ cup peanut sauce
  • ⅓ cup chow mein noodles

Steps

    1. Combine all ingredients (except chow mein noodles) in medium bowl. Spoon mixture into 2-quart microwave-safe dish. Cover and microwave on HIGH 8 minutes, stirring once halfway through cook time. Let stand covered 2 minutes.
    2. Stir and microwave 6 more minutes or until mixture is 165°F. Let stand covered 5 minutes. Sprinkle noodles over top and serve.

Pineapple-Ginger Slaw

Ingredients

  • 1 (8 oz) can pineapple tidbits in juice
  • 1 (12 oz) bag broccoli slaw
  • 1 cup grape tomatoes
  • 1 cup matchstick carrots
  • ¼ cup refrigerated ginger salad dressing

Steps

    1. Drain pineapple. Place slaw mix in salad bowl.
    2. Add tomatoes, carrots, and pineapple; toss to coat. Chill until ready to serve.
