Spicy Garlic Pasta with Sausage and Baby Broccoli

Ingredients

  • 2 tablespoons + 1 teaspoon kosher salt
  • 12 cloves garlic
  • 16 oz fresh baby broccoli (or rapini)
  • 2 tablespoons + ¼ cup extra-virgin olive oil
  • 5 links mild (or hot) Italian sausage (about 20 oz)
  • 1 lb penne (or casarecce) pasta
  • 1 teaspoon crushed red pepper
  • ¼ cup grated Parmesan (or pecorino) cheese (optional)

Steps

    1. Bring water to a boil for pasta; add 2 tablespoons salt to water. Chop garlic finely (about ¼ cup). Place baby broccoli in microwave-safe dish, cover, and microwave on HIGH 2 minutes.
    2. Preheat large sauté pan on medium 2–3 minutes. Place 2 tablespoons oil in pan, then add sausages. Cook 8–10 minutes, turning occasionally, until sausages are browned and 165°F; remove from pan.
    3. Meanwhile, cook pasta following package instructions; drain, reserving 1 cup pasta cooking water.
    4. Cut sausages into thin slices. Place remaining ¼ cup oil into same pan, then add garlic; cook 2–3 minutes, stirring occasionally, until garlic turns lightly brown. Stir in red pepper and cook 30 seconds.
    5. Add baby broccoli, sausage, pasta water, and remaining 1 teaspoon salt; cook and stir 1 minute until baby broccoli is tender. Add pasta; cook and stir 1 more minute until well blended. Top with cheese, if using. Serve.
