Spicy Chicken and Peach Skewers

Ingredients

  • 1 large red onion
  • 3 large, fresh jalapeño peppers
  • 2 large, ripe peaches
  • 12 (12-inch) wooden skewers
  • 1 ¾ lb boneless, skinless chicken breasts
  • 2 teaspoons kosher salt
  • ½ teaspoon pepper
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • Cooking spray
  • ½ cup peach (or apricot) preserves
  • ¼ cup hot sauce
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons hot honey

Steps

    1. Preheat grill (or grill pan) on medium. Cut onion and jalapeño into 1-inch pieces. Peel peaches, if desired; cut each into 8 wedges, then cut each wedge in half. Alternate threading 1 piece peach, 2 pieces onion, and 1 piece jalapeño onto 8 skewers. Cut chicken into ½-inch-thick pieces, then thread onto remaining 4 skewers (wash hands).
    2. Combine salt, pepper, paprika and garlic powder; coat skewers with seasoning, then coat with spray. Combine preserves, hot sauce, soy sauce, and hot honey, whisk to blend.
    3. Place chicken skewers on grill; cook 14–16 minutes, turning often, until chicken is 165°F. Place peach skewers on grill 10 minutes into chicken's cook time; cook 5 minutes, turning occasionally, or until grill-marked and tender. Baste all skewers with glaze during last 2 minutes of cooking. Transfer skewers to serving platter. Serve with remaining sauce on the side.

    Chefs Tip: You will need sturdy bamboo (or metal) skewers to hold the weight of the chicken. If not available, place 2 skewers together when skewering chicken.
