Ingredients
- 1 lb fresh okra
- ½ cup all-purpose flour
- ½ cup yellow cornmeal
- ½ teaspoon garam masala
- ½ teaspoon kosher salt
- ¼ teaspoon red pepper
- 1 large egg (or ¼ cup egg substitute)
- ¼ cup whole milk
- ½ cup vegetable oil
Steps
- Cut okra into bite-size pieces (or leave whole); set aside. Combine flour, cornmeal, garam masala, salt, and red pepper until blended; place in shallow dish.
- Whisk egg and milk in second shallow dish until blended. Dip okra into milk mixture, allowing excess to drip off, then dip into cornmeal mixture, using fingertips to evenly coat.
- Place oil in large sauté pan on medium-high 4–5 minutes. Gently place okra in oil in small batches; fry 3–4 minutes, turning occasionally, or until tender and golden. Remove from oil with slotted spoon; drain on paper towels. Serve.
