Soy Marinated Hard-Boiled Eggs

Ingredients

  • ½ cup mirin (or seasoned rice vinegar)
  • ½ cup reduced-sodium soy sauce
  • 6 hard-boiled eggs

Steps

    1. Combine mirin and soy sauce in small bowl.
    2. Peel eggs, if needed, and stir into soy sauce mixture. Cover and chill 1 hour (or up to 4 hours) until desired flavor and color are achieved. Drain and serve.
